Hi friends!

I’m here today for a quick check-in because I shared this recipe on my friend’s blog yesterday! Remember Gabriella? She was here a few weeks back to share AIP plantain fritters, and now I’m sharing a luscious AIP dessert on Beyond the Bite.

My latest mood? Carob obseeeessed. YES it’s so good!

I’ve haven’t had chocolate in over three years. A bizarre idea to give up chocolate for a while turned into a realization that I don’t tolerate chocolate at all. I get migraines and an intense racing heart whenever I eat it, questioning if I’m actually having a heart attack at twenty years old. So chocolate and I had to break up for good it seems.

After a year, you actually do get used to not eating chocolate (GASP!). Occasionally I wish I could eat a chocolate chip cookie, but otherwise it’s not as big of a deal. This coming from a girl who could have kept Hershey in business all by herself as a kid. SERIOUSLY.

But I have a new love these days, and it is carob, The flavor is different that cocoa, more fruity and less bitter. It is often used as a cocoa substitute just because the color is very similar, but it most definitely offers a different flavor that I happen to love.

Any carob lovers will love these easy fudge pops, and if you haven’t tried carob yet, it’s worth a try! Although, you can always sub cocoa powder for the carob if you prefer.
